The maximum text is 16 characters per line (letters/spaces) and no more than 3 lines for small or 4 for the large tag per side. Less text means it will be engraved bigger onto the tag. Click and drag the corner of the text box to enlarge the typing area.

Will the Text size be the same on all my tags?

No, unless they have same amount of letters - Text size is adjusted by height and width. The more letters/words means smaller text. A four letter name on a tag, will be a lot larger than a 7 letter name for example. Basically you don't get tall thin letters to height of engraving area, they are in proportion.
